Joeies Recipes

Here are some recipes from the brother Joey. He is quite proficcent in the kitchen.

Stuffed Bell Peppers with tomato basil sauce

- 4 bell peppers
- 1 C rice
- 1 LB Ground Beef
- 14 oz can of tomato sauce
- basil to taste
- 1 t salt

Core pepper and remove top (set aside). brown beef, cook rice. mix and "stuff" the pepper. bake without top at 350 for 12 minutes. mix tomato, basil and salt, add to peppers, bake for 5 minutes more. serve.



Joey's spanish rice with ground beef

1 lb. ground beef
1 med. onion, chopped
1 sm. bell pepper, chopped
2 stalks celery, chopped
1 (15 oz.) can tomato sauce
1 bay leaf
1/2 c. rice, uncooked
3/4 c. water

Brown ground beef in large skillet. Drain off all grease except 1 tablespoon. Add onion, bell pepper and celery and fry for 5 minutes. Add tomato sauce, bay leaf, rice and water. Cover and simmer for 30 minutes.
