Piraeus Soup



This is the soup I made for supper tonight. It was very very good. Serve with bread for dipping.

2 Medium Onions
4 Large cloves of Garlic
olive oil
28 oz can of Tomatoes
Oregano
Basil
Salt
Pepper
1/4 C white wine
1 lb shrimp, shelled and deveined
8 oz feta, cut in cubes....it gets all gooey and good.

Sautee Onions and Garlic in oil for a bit. add tomatoes (I added water at this time because it was too thick) and spices. Bring to boil. Add wine, bring to boil. Add shrimp. Simmer for 5 minutes; until shrimp is pinkish white and cooked. Add feta, simmer for 2-3 minutes. Serve. Serves 4-6
